Mike Phillips

A native of Iowa, Chef Mike Phillips began his cooking career at popular area restaurants such as Modern Cafe and Walker Art Center. He and wife Michelle later went on to open Chet's Taverna, an admired neighborhood eatery whose menu was heavily inspired by Mike's international travels and his commitment to regional and sustainable foods.

Having now cooked at The Craftsman in Minneapolis for two years, Mike's interest in European cooking, sustainably-grown foods, local quality, and producers who use environmentally responsible methods of production are an integral part of the menu at this popular public house that serves New American cuisine in a restored Arts and Crafts environment.

Mike's recipes are rich and innovative, making your mouth water just by reading the titles. His Beef Hanger Steak with Apple, Squash, and Hen of the Woods Mushroom Chutney just wouldn't be the same without Hoch Orchards' crisp and delicious Minnesota apples. Hoch Orchards, located in La Crescent, MN and certified by Food Alliance Midwest for their sustainable growing practices, has been owned and operated by the Hoch family since the early 1950's. The Hochs are well known at area farmers' markets for their outstanding variety of apples – over 50 in all – as well as for their other delicious fruits and vegetables. With six acres of original plantings and 4000 to 5000 young apple trees planted on approximately fifteen acres, they are looking forward to bringing these new varieties to market. Mike couldn't be more thrilled with infusing his dishes with the fresh, delectable sweetness of the Hoch's bounty and supporting a strong, family-run farm.
