Jorge Guzman

Jorge Guzman of Tejas Restaurant in Edina grew up in Merida, Mexico where he regularly ate delicious food prepared by Mayan cooks and enjoyed from-scratch meals made by his grandmother and aunt. Incorporating Mexican and homemade flavors from his childhood with tastes from the southern United States and South America, the restaurant's focus on Southwestern cuisine gives Jorge the freedom to explore flavors and dishes from many places, including Minnesota. At only 28 years of age and Executive Chef at Tejas, Jorge has incorporated local foods into every restaurant he's worked in thus far.

Jorge buys his pork from Tim Fischer of Fischer Purebred Hog Farm in Waseca. Tim is the fifth generation farming on his land and all of his pork is chemical-free. "We use a combination of old-fashioned ideas and new modern ideas in the way we raise things," Tim says. Tim believes in the importance of creating bonds with chefs interested in sustainable practices and values Jorge's vision.

"We're in the heartland," Jorge says, and he believes that "the simpler a recipe, the better," a belief evident in Tejas' bold flavors, simple presentations, and both hearty and healthy meals. Jorge's blend of flavors and ideas combined with the high-quality, nutritious pork he buys from Tim makes for an innovative menu that includes dishes and flavors for everyone.
