As a young boy, JD Fratzke explored the bluffs and valleys around his native Winona, along the Mississippi River. Later, he and his wife Lisa traversed the globe exploring exotic tastes and the flavors of the world. These days, as chef and managing partner of The Strip Club in the Dayton's Bluff neighborhood of St. Paul, JD is determined to not only create a unique menu highlighting local, sustainable producers, but to also leave a legacy of great food for his young daughter Nina.
JD is passionate about food and he sources as much as possible from Minnesota growers. Core ingredients include local cheeses, game, produce, beef, and fish, with his menu affably stating, "Vegetarians regarded with benevolent amusement."
Jim and LeeAnn VanDerPol of Pastures A' Plenty in Kerkhoven began farming in 1977 and 20 years later, son Josh and his wife Cindy joined their efforts, making Pastures A' Plenty a true family operation. "Animals complete the farm cycle," explains Jim. "They help break dependency on off-farm inputs, but more importantly, we all like working with the animals." Pork is their primary focus but they also raise chickens and graze dairy heifers. LeeAnn states, "The animals are healthier in the outdoors, and therefore we're healthier."
The VanDerPols, who are Food Alliance Certified, have been working with JD for many years, admirably affirming, "JD loves to create with his food and wants people to enjoy his food. We try to raise animals that are flavorful and we enjoy caring for them. It is nice to work with a chef who likes to create with our product. JD's creations are a work of art."
