Prairie Hollow Farm

Pam Benike of Praire Hollow Farm Elgin, Minnesota is one of the few remaining artisan cheesemakers in the state. With the help of the quality milk she has bred her "girls" to produce, Pam lovingly crafts a variety of aged cheeses of unmatched quality. "I love the cows, I love the soil, I love the land," Benike says. "This is the life I love."

Pam is a regular at the Mill City Farmers Market and also sells her cheese through the SE Minnesota Food Network, of which she is the Network Coordinator.
