Chris Serio

The University of Minnesota, Morris is a nationally recognized liberal arts college set amidst the rolling prairies, farmland and meandering rivers of western Minnesota. But recently, it is more than the curriculum that is getting rave reviews. Through a visionary partnership dubbed the Pride of the Prairie local foods initiative, the University, Sodexho Campus Services and farm, nonprofit and community leaders are giving students a taste of delicious foods made from the fruits of area farms.

Near the center of this innovative initiative is Chef Chris Serio. When the University and Sodexho asked if he would develop and prepare a menu based on local ingredients, he jumped at the chance. His experience growing up on a farm, combined with his training as a chef infused in him the value of fresh, local foods.

Chris' seasonal menus run from tossed wheat berry and corn salad to whole wheat pancakes with real maple syrup. The VanDerPols are one of the farm families who contribute to Chris' menu. MFU members, the VanDerPols run a Food Alliance certified, diversified livestock farm in Kerkhoven. After raising hogs in confinement for many years, the VanDerPols moved their pigs outside onto pastures, named their farm Pastures A' Plenty and now raise 1500 hogs a year using sustainable practices. For his part, Chris enjoys highlighting the pride, hard work, and talent of area farmers and introducing students to the taste and quality of local foods.
